Nonostante l’ambiente ostile devo dire che la ricetta che ho scelto (riguardante soltanto le polpette) mi aveva ispirato fin dall’inizio e si è dimostrata validissima. Queste polpettine di pollo sono morbidissime e la presenza dello zenzero e del peperoncino è fondamentale per farle diventare saporite al punto giusto. Cotte con le verdure poi hanno una marcia in più e ne è uscita una ricetta veramente ottima.

MEATBALLS SPICY CHICKEN STEW
Serves 2
  • 200 grams of cooked chickpeas

  • 3 tablespoons extra virgin olive oil
  • salt

procedure
Meanwhile soften the bread with a little hot broth and squeeze well.
Reduce the chicken breast into small pieces and then chop it with a meat grinder (I used the meat grinder of the purple line of Pedrini ) and grind into powder. Add the crumbs, grated ginger, a sprinkling of pepper and salt. Mix the ingredients well with a fork and when it will form a homogeneous mixture of small meatballs (with doses of these will get 15 meatballs).
Brown meatballs in 1 +1 / 2 tablespoon oil and when they are golden on the surface transfer them to the pan with the zucchini making sure to remove the garlic. Also Combine the chickpeas, a ladle of hot broth and cook covered over low heat for about 15 minutes, stirring occasionally.

MUFFIN WITH WALNUTS AND MUESLI
Serves 6 muffin

wet ingredients
· ; 2 eggs
· 75 ml di olio di semi(io girasole)
·          1 vasetto di yogurt bianco magro

Ingredienti secchi
·          20 gr di noci + 6 mezzi gherigli per decorare
·          200 gr di farina 00
· 90 grams of brown sugar (Demerara I)
· 1 +1 / 2 teaspoon baking powder
· 80 grams of fruit muesli with raisins
· ½ cucchiaino di sale fino

Procedimento
In un recipiente unire la farina, il sale, il lievito setacciato, lo zucchero, il muesli, le noci tritate grossolanamente con il coltello e mescolare per ottenere una miscela degli ingredienti secchi omogenea.
In un recipiente a parte sbattere le uova con l’olio di semi.
Unire le uova e l’olio nel recipiente con gli ingredienti secchi, aggiugere lo yogurt e con un leccapentole girare brevemente con poco vigore per far si che gli ingredienti si amalgamino(il composto ottenuto non sarà molto liquido).
Preriscaldare il forno a 180°.
